Vimto Pancakes
Why not give your pancakes a fruity twist this year by adding a splash of your favourite fruity drink Vimto!
Ingredients
For the pancake mixture:
110g/4oz plain flour, sifted
pinch of salt
2 eggs
200ml/7fl oz milk mixed with 75ml/3fl oz water
50g/2oz butter
To serve:
Vimto Original Cordial
Honey
Raspberries
Method
Sieve the flour and salt into a large mixing bowl
Add the eggs into the flour
Whisk the eggs and flour together
Gradually add the milk and water mixture
Mix the batter until smooth
Melt the 50g/2oz of butter in a pan
Spoon 2 tbsp of the melted butter into the batter and whisk it in
Use the remaining melted butter to grease the pan before adding the batter
Once the pan is hot add the batter using a ladle, approximately 2 tbsp is about right for an 18cm/7in pan.
Cook the pancake for 30 secs on side, now for the fun bit flip the pancake to the other side and cook for another 30 seconds
To serve, wash the juicy raspberries put a few in-between each pancake.
Mix two tablespoons of fruity Vimto cordial with two tablespoons of honey and mix in a small bowl.
The drizzle the delicious mixture over the top of the stuffed pancake and enjoy.
